The best high-fiber protein bars (and the fiber trap)
Protein bars solved the protein problem and then noticed that fiber sells too. The result is an aisle full of bars advertising double-digit fiber counts, most of which come from a small set of manufactured fibers that behave very differently from the fiber in a bowl of lentils. Some of them are genuinely useful. Some will ruin your afternoon. The good news is that you can tell which is which from the ingredients list in about five seconds, once you know what to look for.

Whole-food fiber
Dates, figs, almonds, oats, chia. It arrives with everything that naturally accompanies fiber - polyphenols, minerals, a food matrix that slows digestion - and your gut handles it the way it has handled fiber forever. The downside is that it's bulky, so bars built this way rarely exceed 5-10g. That's a real 5-10g.
Chicory root inulin
The most common way to make a bar's fiber number large. Inulin is a legitimate prebiotic with real evidence behind it, and it's also completely fermented by gut bacteria - meaning gas. A bar with 12g of inulin is a substantial fermentation load delivered in ninety seconds, which is not how anyone evolved to eat fiber. This is the single most common reason people say high-fiber bars destroy their stomach.
Soluble corn fiber
Manufactured from corn starch, widely used, and generally better tolerated than inulin at the same dose. It counts as fiber and is treated as such by regulators. Reasonable middle ground.
IMO - the one to watch
Isomalto-oligosaccharide became popular in low-carb bars because it let manufacturers subtract a large number from net carbs. Research since then indicates a substantial portion of IMO is actually digested and absorbed like a sugar rather than reaching the colon as fiber, which means both the fiber count and the net-carb figure can overstate reality. Regulatory treatment of it has tightened in some markets for exactly this reason. If IMO is high on the ingredients list, mentally discount the fiber claim.

Turn the bar over. Find where the fiber is coming from in the ingredients list.
Dates / nuts / oats near the top - trust the number, expect it to be modest.
Chicory root or inulin - real fiber, start with half a bar.

What a good bar looks like
Rather than ranking specific products that reformulate every year, here's the spec worth shopping against:
- 5g+ fiber, 10g+ protein. Enough of both to be worth eating instead of two separate things.
- Fiber from a source you can name as a food. If you can point at the ingredient in a supermarket, it's whole-food fiber.
- Under ~10g of added sugar. Many "healthy" bars are confectionery with protein powder in.
- Short ingredients list. Not a health rule exactly, but a strong correlate of whole-food fiber.
- No sugar alcohol pile-up. Maltitol and sorbitol have their own digestive consequences, and stacking them with 12g of inulin is asking for trouble.
Categories that tend to fit: date-and-nut bars (whole-food fiber, moderate protein), oat-based bars, and the better seed bars. Categories that tend not to: anything marketed primarily on net carbs, and anything advertising a fiber count that would be impressive in a bowl of beans.
The honest comparison
Half a cup of black beans is roughly 7-8g of fiber and about 7g of protein for a fraction of the price of any bar, and the fiber is intact, varied, and arrives with the food matrix that makes it behave well. A bar cannot beat that nutritionally. What it beats is nothing, which is what you'd otherwise have eaten in a car or between meetings.
That's the correct frame for the whole category. A bar is a gap-filler for the days food doesn't happen, and judged that way a good one is genuinely useful.
